Cauliflower Rice

If you are looking for a delicious and healthy meal, try this!  It tastes like fried rice but is actually cauliflower!

I even got a "REALLY GOOD" from the hubby after trying this one.

Don't worry, I got this Mom!

Miss Minka is adjusting to being a big sister and taking a back seat to the constant attention she has received for her previous 2.5 years. So far, she has done really well with daily comments about Nora "I wuv her!" or "She likes me!"

BUT I have recently realized I am not fast enough for her anymore.  In the past she would ask for help getting dressed or brushing her teeth and there we were to offer help immediately.  Now, she has to wait at times while I finish feeding Nora or have to find a nuk or change a diaper.  Instead of yelling or getting really upset she is on a mission to fend for herself.

She can now maneuver her shirt on AND off now which was her last obstacle for getting dressed each day.  (and changing her outfit multiple times each day).

She figured out how to turn the water on at the sink so that make me useless in the hand washing department.

She accomplished applying toothpaste to her toothbrush.

The real kicker to this is she showed me last night she is capable of putting on her own diaper.  That's right folks, she can now wear diapers forever without my intervention - I can only hope this continues into her teenage years.

Is your child too old for diapers when they begin to put them on by themselves?



I literally watched our bedtime routine happen in front of me without any intervention.

1.) Put on jammies (you can see she already did this prior to my pictures)
2.) Go potty one last time before bedtime.  Yes, she cleans out her own little potty.
3.) Put diaper on for nighttime
4.) Put pants back on

 5) I missed the picture of her brushing her teeth by herself.

I think I am officially only needed to operate zippers. And I suppose watch Nora.

1 month 3 days as a family of four

Nora is growing quickly!  Here is a picture of her at her 2 day appt.
Here she is today, 1 month and 3 days old.
